Every great meal starts at the source. We begin our day together navigating the vibrant sights, aromas, and sounds of the local market. We’ll introduce you to our favorite local vendors, taste seasonal produce, and handpick the exact ingredients we'll use in our kitchen.
3. The 9-Mole Tasting Experience
Mole is the heart and soul of Oaxaca, but many travelers only ever get to try one or two varieties. We want you to understand its true complexity. During our session, we guide you through an exclusive tasting of nine distinct moles—from rich, dark Mole Negro to bright, herbal Mole Verde—exploring the history and secret chiles behind each flavor profile.
4. Mezcal, Brunch, & a 4-Course Feast
We believe food should always be a celebration. We fuel our day with a traditional Oaxacan brunch and introduce you to artisanal Mezcal, teaching you how to sip and pair it like a local. Then, together, we roll up our sleeves to cook a complete 4-course ancestral meal using classic techniques and traditional tools.
